MANUFACTURING PROCESS
WHAT IS
BEAN TO
BAR?
Bean-to-bar refers to artisanal chocolate making. The production takes place in microbatches
with great attention to each step of the process – from cultivating and harvesting the cocoa
bean until the final tablet is ready – with the aim of perserving the quality of the raw material
and bringing out its characteristics. This way of making high-quality chocolate is in contrast
to the highly in industrialized production, where less control is taken over the process and the
use of non-essential ingredients such as lecithin, vanilla extract and artificial flavors is
common to control the flavor of the final product.
